At the end of January 2020, cooks Steph (Rituals of Plate), Lizzy (With a Glowing Heart) and Dan (Springfield Castle) collaborated for a sold out cookbook-inspired supper club at The Green Room in Springfield Castle in Limerick.

The first of a planned seasonal series of events, our first one was inspired by vegetarian and vegan recipes from the cookbook East by Meera Sodha.

Each of us cooked a starter, main and dessert and food was served family-style on large shared tables. It was a magical and buzzy evening - and great to be part of bringing new energy to the West Limerick food scene. Menu from our East/winter supper below:

EAST COOKBOOK INSPIRED SUPPER

Starter -

Beetroot and ginger soup

Sweet potato momos

Potato dosa with coconut and pea chutney

Main -

Black dal with flatbread and citrus salad

Kung pao cauliflower

Celeriac and kale gado gado

Dessert -

Vietnamese coffee ice cream

Salted miso brownies

Banana tatin
